Founded in 1988, Signatory Vintage has established itself as one of Scotland’s most respected independent bottlers, renowned for selecting exceptional individual casks and presenting whisky with minimal intervention. Symington’s Choice represents a particularly prestigious selection within the Cask Strength Collection, showcasing individual casks personally selected by Signatory founder Andrew Symington. Glenburgie itself remains relatively uncommon as a standalone single malt, with much of its production historically destined for Ballantine’s. Its naturally fragrant, fruit-driven Speyside character responds beautifully to extended maturation, and the addition of a First Fill Oloroso Sherry Hogshead finish here introduces considerable richness while preserving the elegance and mature fruit character of the underlying spirit.

Tasting Notes:
The aroma is wonderfully mature and complex, opening with ripe figs and raisins alongside bittersweet dark chocolate and roasted nuts. Subtle nuances of aged leather, seasoned oak and soft vanilla emerge underneath, creating considerable depth while retaining the elegance of the mature Glenburgie spirit. The palate reveals a beautifully balanced sweetness, with rich caramel and juicy plums accompanied by gentle cinnamon spice. Mature oak provides structure and texture without overwhelming the fruit, while touches of chocolate, nuts and Oloroso richness continue to develop. The finish is long and sophisticated, carried by lingering bittersweet chocolate, roasted nuts and refined oak spice, gradually becoming drier and leaving a beautifully composed impression of mature sherry, fruit and seasoned wood.
