Bottled at a formidable natural cask strength of 61.7%, with an extremely limited outturn of just 319 bottles, this is a bold and uncompromising expression of Craigellachie that delivers tremendous concentration, structure and character.

Founded in 1988, Signatory Vintage has established itself as one of Scotland’s most respected independent bottlers, renowned for selecting distinctive individual casks and presenting them with minimal intervention. Craigellachie is particularly well suited to this style of bottling, with its naturally muscular, full-bodied and characterful spirit providing the structure required to stand up to active sherry maturation. The influence of the 1st Fill Oloroso cask brings considerable richness to this expression, layering the distillery’s substantial malt character with dark chocolate, roasted nuts, citrus and spice while retaining the weight and individuality of the underlying spirit.

Tasting Notes:
Prominent Oloroso sherry immediately leads the aroma, harmonising with roasted walnuts and vibrant orange peel. Dark cocoa develops underneath alongside spicy oak, adding depth and an elegant complexity to the rich sherry character. The palate is full-bodied and intense, with dark chocolate and creamy toffee joined by warming baking spices and a firm oak structure. Despite its substantial 61.7% cask strength, the combination of rich sweetness, chocolate and structured spice creates impressive balance and depth. The finish is exceptionally long and increasingly dry, revealing bitter cocoa, roasted nuts and seasoned oak before a distinctive wave of spice rounds out this precise, powerful and characterful Craigellachie.
