Founded in 1988, Signatory Vintage has become one of Scotland’s most respected independent bottlers, renowned for sourcing exceptional casks and presenting them with minimal intervention. Symington’s Choice showcases particularly rare and mature casks selected by founder Andrew Symington, often highlighting whisky from highly sought-after distilleries. Ardbeg, founded in 1815 on Islay’s southern coast, is famous for its intensely peated and smoky spirit, typically layered with citrus, maritime salinity and oily malt character. The distillery experienced lengthy periods of closure during the late twentieth century, making surviving casks from the early 1990s increasingly scarce. After 33 years in a First Fill Oloroso Sherry Butt, this 1991 release brings together mature Ardbeg smoke with rich dried fruits, dark chocolate, leather and old oak, creating a powerful but remarkably composed expression.

Tasting Notes:

The aroma opens with dense peat smoke and smouldering embers, followed by dark raisins, dates and dried figs from the Oloroso maturation. Layers of leather, polished oak and dark chocolate develop alongside subtle maritime salinity, roasted nuts and a touch of citrus peel. The palate is powerful and deeply layered, with rich dried fruits, dark chocolate and sherry spice wrapped around Ardbeg’s unmistakable earthy peat smoke. Clove, walnut and old leather bring further complexity, while seasoned oak adds structure without overwhelming the remaining fruit. The finish is exceptionally long, smoky and warming, with lingering dark fruits, cocoa, salty peat and mature oak gradually fading into dry spice and gentle maritime character.
