Join Hi Liquor Australia for an exclusive evening celebrating one of Australia's most acclaimed whisky distilleries, Sullivans Cove, hosted by Andy Gaunt, CEO of Sullivans Cove.

Set within the intimate surroundings of Jinius in Dawes Point, Sydney, this special event brings together exceptional Tasmanian single malt whisky, a carefully curated three course dinner, and the opportunity to hear directly from the team behind some of Australia's most sought-after whiskies.

Throughout the evening, Andy will guide guests through six remarkable Sullivans Cove expressions, exploring the distillery's approach to maturation, cask selection and the craftsmanship that has earned its whiskies international recognition.

The lineup includes an extraordinary selection of rare and exclusive bottlings, including three single casks selected for The Antelope Macau, two of which were selected in collaboration with Hi Liquor Australia.

The Whisky Lineup

1. Sullivans Cove Single Cask Brandy - 47.5%

From Sullivans Cove’s historical brandy programme, this single cask, single varietal brandy was distilled from 100% Tasmanian Pinot Noir and aged in French Oak ex-Tawny cask for 13 years and 11 months.

2. Sullivans Cove Double Cask Ex-Brandy - 47.5%

This limited edition Sullivans Cove Double Cask combines three American Oak ex-Brandy casks with one French Oak ex-Apera cask, marking the first time we’ve seen Sullivans Cove’s own brandy casks utilised for the maturation of their Tasmanian single malt whisky.

3. Sullivans Cove Navigator 16 Year Old – American Oak - 47.2%

This limited edition 16 year old single malt brings together refill hogsheads and first-fill ex-Bourbon casks from Sullivans Cove’s early years. A return to the distillery’s foundations, created with food pairing in mind.

4. Sullivans Cove 18 Year Old American Oak (Ex-Bourbon) – TD0158 - 47.5%

Exclusively Selected by The Antelope Macau

An exceptional 18-year-old single cask selected by The Antelope Macau, representing the remarkable ageing potential of Tasmanian whisky.

5. Sullivans Cove 7 Year Old French Oak Chardonnay – SC0808 (Cask Strength) - 65.4%

Exclusively Selected by The Antelope Macau × Hi Liquor Australia

A distinctive and highly intriguing single cask matured in French oak Chardonnay cask wood, bottled at cask strength. A rare opportunity to experience an unconventional side of Sullivans Cove.

6. Sullivans Cove 11 Year Old French Oak Refill – TD0491 (Cask Strength) - 66.7%

Exclusively Selected by The Antelope Macau × Hi Liquor Australia

An outstanding 11-year-old French oak refill single cask, bottled at cask strength. A fitting conclusion to an evening exploring some of the distillery's most exciting releases.

Guests will enjoy a three-course dinner alongside five carefully selected whiskies and one brandy, with Andy Gaunt sharing insights into the stories, production and maturation decisions behind each expression.
